Pequin (also spelled piquin) is a small, oval wild-type Capsicum annuum native to the deserts of northern Mexico and South Texas, where it also grows semi-wild today. The tiny, elongated pods—barely half an inch long—pack intense, bright heat and a slightly citrusy, nutty flavor. They are a prized ingredient in traditional Mexican salsas, vinegar-based hot sauces, and dried chile flakes.
