Bell peppers are large, blocky sweet peppers with thick, crisp walls and zero heat; they ripen from green to red, yellow, or orange, becoming sweeter and higher in vitamin C as color develops. Native to Mexico and Central America, they were brought to Spain in 1493 and subsequently spread across Europe and Asia. Botanically a fruit, they are used culinarily as a vegetable in salads, stir-fries, and stuffed-pepper dishes worldwide.
