The jalapeño is a medium-sized chili pepper that ripens from dark green to red and is harvested most often while still green. It has a bright, grassy flavor with moderate heat and thick, meaty walls well suited to stuffing, roasting, and pickling. A cornerstone of Mexican cuisine, it is also widely used in Tex-Mex cooking, hot sauces, and as a pizza topping across the United States.
