Chipotle is not a distinct cultivar but a preparation: a smoke-dried ripe jalapeño (Capsicum annuum), deriving its name from the Nahuatl word chīlpoctli meaning "smoked chili." The drying and smoking process — traditionally done over wood such as pecan or mesquite for several days — transforms the fresh pepper into a dark brown, wrinkled pod with a characteristic earthy, smoky-sweet flavor. It is foundational to Mexican and Tex-Mex cooking, appearing in adobo sauces, salsas, stews, and marinades.
