The Anaheim is a large, mild green chili — typically 6–7 inches long — descended from New Mexican landrace peppers introduced to California in the late 1800s by rancher Emilio Ortega, who selected for a milder flavor profile suited to the region. Its thick walls make it well suited for roasting, grilling, and stuffing, including the classic chiles rellenos. When grown in the Hatch Valley of New Mexico it is often marketed as a Hatch chile.
