Ají Limón, also known as Lemon Drop, is a bright-yellow Peruvian pepper from the Capsicum baccatum species whose name means 'lemon pepper' in Spanish, reflecting its pre-Columbian roots in the region. Its flavor is distinctly citrusy and fruity — reminiscent of lemon and lime zest — with a crisp heat that makes it especially popular in Peruvian ceviche, ají sauces, and other dishes where bright acidity is valued. The thin-walled, tapered fruits grow to about 5 cm long and are harvested at full yellow color.
