The pimento (pimiento) is a heart-shaped, deep-red sweet pepper measuring roughly 3–4 inches long with notably sweet, succulent, and aromatic flesh — considered sweeter than a red bell pepper. It is best known internationally as the bright red stuffing inside green olives, a tradition that originated in Spain. The flesh is also used in pimento cheese and is exceptionally good eaten fresh when fully ripe.
