Poblano peppers are a mild, dark green Capsicum annuum variety originating from the state of Puebla, Mexico. The large, heart-shaped fruits measure roughly 4–6 inches long and are prized for their thick walls, which make them ideal for stuffing. When dried, they become ancho chiles—a key ingredient in mole and other traditional Mexican sauces.
