Padrón peppers are a small (about 2 inches) landrace chili from the parish of Herbón in Galicia, northwestern Spain, protected by a Denominación de Origen since 2010. They are traditionally harvested green and unripe, pan-fried in olive oil until blistered, and served hot with coarse salt as a classic Spanish tapa. Most are mild, but a small percentage — unpredictably — will be quite hot, giving rise to the Spanish saying 'os pementos de Padrón, uns pican e outros non' ('Padrón peppers, some are hot and some are not').
