Sport peppers are small, thin, finger-shaped chilies — typically 1 to 1.5 inches long — pickled in brine and most famous as the obligatory garnish on the Chicago-style hot dog. They are sold almost exclusively pickled rather than fresh, so the tangy brine flavor is as prominent as the moderate heat when eaten. They mature from green to red but are invariably harvested and packed green.
